I want to remove the iMessages from my old iPhone using the iMessage in iCloud feature and then wipe the device. If I do this, will the messages that originated from the phone still be on iCloud and other devices I use iMessages in iCloud with?

With iMessage in iCloud if you delete the message from one device, it will delete if from everywhere else. It's just like using iCloud Photo library in that sense.

Here seems to be as much as Apple has provided for support of Messages in iCloud. See if that helps. Keep all your messages in iCloud - Apple Support
If you are going to wipe the device don't delete the iMessages first. Wiping the phone will remove them from the phone without deleting them from iCloud.
