My Ipod Touch will only play 1 song over and over and when I select and album it randomly picks a song to play over and over ?

You have your iPod on Repeat 1, which plays the same song until you stop it. So turn off the repeat function.
In the screenshot above, shuffle is on and repeat is off. Tapping the relevant button operates the function. In the case of the shuffle button, it's either on or off. But with the repeat button, tapping it cycles it from:
- Repeat is off
- Repeat on
- Repeat 1 on
- Repeat off
Notice the difference between the Repeat button in the two screenshots below:
Look at the Repeat button, notice the tiny 1 in the arrows in the second picture. That 1 means the iPod is in Repeat 1 mode.
