Am on the fence about ditching the cable tv and internet and getting an iPad to satisfy my needs. That would mean that I would want to watch some of the shows I like that are network television. Or, am I just going to have to drop those shows and catch them on reruns somewhere?

You cannot watch TV on ipad without a Internet connection.
You can buy a mifi Mobile router that works with a simcard it can run up to 10 devices
Uses a simcard contact or pay & go.
Look at Netgear aircard on EBAY / Amazon
