I have taken a large number of pictures that I am now downsizing to a select few keeper file. The problem is that once I identify and add the pictures to the new "keeper album" the pictures are not in the correct date taken order. Is there an easy way to sort these pictures by date taken?

And a user album you can under the view menu sort by either oldest of newest first

Tha depends on the version of Photos you are using. In Photos 2.0 on Sierra and Photos 3.0 on High Sierra, you can simply ctrl-click your Keepers" album in the sidebar and use the command "Keep sorted by oldest first". Photos on Yosemite has less sort options.
