I have an adapter to enable me to use earbuds with my iPhone 7 Plus. However, when I try to use them during a phone call I hear nothing. When using them on iTunes or other audio apps I’m able to hear through the earbuds. Does anyone have any advice on how I can use the earbuds during calls?

This must mean you are not using the original Apple-supplied earbuds that came with the iPhone, as these require no adapter.
So it sounds like the issue may well be with these third-party (or not designed for iPhone 7 Plus) earbuds.
