I recently ”upgraded“ my iPhone to iOS 11.4 and now my battery drains extremely quickly, so I want to wipe it and start over. I’ve been using Macs for 30 years and I know what happens when you wipe a hard drive, but I’m not familiar with the iOS, so I don’t know what will happen (such as are any apps included if I reinstall the iOS, etc.).

I would make an appointment at your nearest Apple store genius bar and take advantage of the battery replacement discount.
While it is true that it will restore iOS 11, sometimes a fresh install will resolve problems that you may be having. It is possible that something went wrong with the update so if you a backup, there is nothing to lose from trying.
So, it won't totally return to the factory settings because when I bought it, it had iOS 10.X on it. If it will install 11.4, then it probably won't solve my problem. UGH...

The main problem is that since upgrading to 11.4, I can almost watch the battery percentage drop, even if I don't have any apps running. I've turned off the Background Refresh for all apps. Before the upgrade, I could take my phone off the charger at 7:00 a.m., leave it on and go to work, leave it on all day, check Facebook a few times a day, maybe write 3-4 emails, and listen to a radio station using its own app, and then at 5:00 the battery would still read 80-85%. After this "upgrade," I would follow the same routine except not use any apps during the day, and now at 5:00 the battery says 10-15%. I haven't added any new apps or changed any settings, except turning off Background Refresh for all apps.

What will happen is that if you completely erase all content and settings, it will go back to factory settings with the latest iOS. It will be as if it is a new device. You can get apps you purchased from the app store and anything saved to icloud should sync when you sign in to icloud.

You would just get the 11.4 ios back on iPhone you cannot downgrade.
The battery problem will be if your battery is over 2 years old it will need replacing make an appointment at Apple store or authorised apple repairer for replacement.
