If I totally reset my iPhone 6s Plus, what will happen?

I recently ”upgraded“ my iPhone to iOS 11.4 and now my battery drains extremely quickly, so I want to wipe it and start over. I’ve been using Macs for 30 years and I know what happens when you wipe a hard drive, but I’m not familiar with the iOS, so I don’t know what will happen (such as are any apps included if I reinstall the iOS, etc.).

The main problem is that since upgrading to 11.4, I can almost watch the battery percentage drop, even if I don't have any apps running. I've turned off the Background Refresh for all apps. Before the upgrade, I could take my phone off the charger at 7:00 a.m., leave it on and go to work, leave it on all day, check Facebook a few times a day, maybe write 3-4 emails, and listen to a radio station using its own app, and then at 5:00 the battery would still read 80-85%. After this "upgrade," I would follow the same routine except not use any apps during the day, and now at 5:00 the battery says 10-15%. I haven't added any new apps or changed any settings, except turning off Background Refresh for all apps.
