In Preview, when I open a password-protected PDF, it takes my password, but then just presents a grey document. There is nothing on it. Do I need to update Preview - if so - how?

You can check if it is the problem of your Preview by viewing a password-free PDF, if it works, you can use another PDF reader to open the password protected file, such as Adobe Reader, it is free and it processes similarly to open a password-locked PDF.
The only way to update Preview is to update/upgrade your OS. Was the PDF password protected using the instructions below? Once the PDF is open, if you try the below, does that give you a useable document?
