Stop Zoom Recording from uploading to iCloud drive

Preface/Situation: I teach online using Zoom. Each 2 hour lesson is recorded. We start at 20:00 local time, lesson proceeds for 40 minutes, then we take a 10 minute break. During the initial break, Zoom starts to convert the .zoommp4 file; once the file is converted, the file begins to automatically upload to iCloud drive ( I have a 200 GB paid subscription).

Problem: I use ADSL internet, and the uploading of my Zoom file to iCloud Drive throttles my internet speed, and I can't continue teaching, since my internet speed / bandwidth is consumed by the uploading of the video. Have had to cancel 2 lessons due to this issue (internet speeds throttled by auto uploading iCloud Drive files, even when I click stop/delete)

My Question: how can I still have iCloud Drive on my MacBook Pro (2017 non teach bar) but be able to allocate a folder on my desktop which does not upload to iCloud Drive?

My only solution so far is to disable iCloud Drive and to manually upload any items I want to iCloud. But this defeats the purpose of having a MacBook + paying for iCloud Drive.

Is there a way that we can designate a non-auto uploading file which stays on my local machine (Zoom recordings) which would serve to not throttle my internet speeds, where I work in the developing world with mediocre internet speeds while also using iCloud Drive ???

With Zoom App (meetings application), I can allocate a folder where I want my recordings to go. I don't want my recordings uploaded to iCloud Drive since I want to manually uploaded them to Office OneDrive ( for work).

Thanks in advance for your reply + help.
