I added a Microsoft Exchange account to my iOS Mail app and I am retrospectively scared of the administration warning. Can the admin of my Exchange account wipe my whole phone or view my data/files?

It is possible to delete an account, if you want to.

Follow these steps:

On your iPhone, go to Settings > Accounts & Passwords
Press on the Exchange account on the list of accounts
Scroll to the bottom of the page and press Delete Account
Wait for this to confirm
