You cannot edit a subscribed calendar. I'm guessing that you are referring to the US Holiday calendar on the iPhone. You could stop using that calendar and subscribe to one that better meets your needs, if you wish. Otherwise, ignore the holiday you do not wish to see, or turn the holiday calendar off.
