Suddenly the Pages icon on my Mac has changed. I am using Pages version 7.1. How do I change back to the icon with a orange header with the word Pages and pen across the page?
iMac with Retina 5K display, macOS Sierra (10.12.2)
Going to the App Store did and dragging the icon to the dock or just to the desk top did not work. This continues to be there Pages icon, which opens Pages. I can created a document, attach it to an email and the icon look like I expect it to look

No, it is actually on a friend's new MacPro. I do not have it with me at the moment. I was introducing him to Pages when I noticed the difference from mine, which is what you show above. When I checked, I saw that we are both using Pages version 7.1

Because Pages was on the menu bar, About showed version 7.1, and when I went to File - Open Recent, I saw a list of Pages documents. I will trouble shoot this more in about 5 days when my friend returns with his Mac.
Go to your Applications folder, locate Pages and select it:
Menu > File > Get Info > Click on the App icon > command x (cut)
Does that straighten out your icon?
I suspect you actually have two things, one of which is possibly a document which is not Pages but opens in Pages.
Inside the Pages v7.1 application bundle, there is a AppIcon.icns icon file that normally is the familiar yellow Pages v7.1 icon. Something has damaged this application contents, and it is no longer able to display its custom application icon. What is shown is the default icon on Xcode compiled applications that do not use a custom application icon.
Delete Pages v7.1 from /Applications, and redownload it from the Mac App Store to get the correct application bundle (and application icon). This is one of the rare instances where this will solve a problem by reinstalling Pages.

AppleWorks documents on my Mac running High Sierra are just a plain white icon.
And in my High Sierra 10.13.6 Finder, they are just black exec icons, even with Pages '09 as the opening application:
