How do I add songs to an existing iTunes playlist on a Mac?

The easiest way is to highlight the song(s) and drag to the playlist name in the sidebar.
If you don't have a sidebar, re-activate it by going to View > Show Sidebar.

OK, that is indeed a more complicated question.
There is not an easy way to transfer non-purchased songs from an iPod to a computer. It is not impossible, however, although it requires the use of third party software. See tt2's guide here: Recover your iTunes library from your iPod or iOS device
To the extent you can recover the songs in other ways - grabbing from a backup, re-downloading from the place of purchase, re-ripping from CD - do that first.
I guess my issue is a little more complicated . . . I'm actually trying to add the playlist from my iPod to a playlist on my new Mac. There doesn't seem to be a way to do that. Since I have over 800 songs on the playlist I don't want to do it manually.
