Every time that you provide your email address to a third party for purchases, memberships, newsletter lists, social media, or even as prerequisite information before downloading any software — you risk the exposure of your privacy information to spammers. Privacy policies won't protect you from employees selling your information to the dark net, or compromised security allowing the theft of your privacy information.
On the dark net, there are list brokers that keep selling your email address indefinitely. Spammers continuously change the from email and server content so you can never effectively block the spam. The short answer is to change your email, and get rid of the old one.

So what, next year you change it again? It seems crazy to me.
I have had the same email address since 1994, along with about 12-14 other email addresses.
The Spam finding it's way into my mail box is far and few between.
There is server side filters that typically can be set, depending on your email provider—This should stop a major slug of it right there, especially the more gratuitous variety. You can log in through a browser and verify your user setting that filtering is turned on or get ISP help.
Then there is client side filtering, using Macs built in Junk mail, or third party Spam filter to pick up the remainder of spam.
These filters are trainable (Bayesian,) and easily added to the database. You can spend your life running from Spam—but truly it is not that big a deal to just manage it.
Here is an example of server side filtering—which never even made to my Mac mail client yesterday, Spam Sieve did not even have to look at it— SpamSieve shows 4 pieces of mail to the SPAM folder. Spam in my inbox= 0
It's not easy to stop Spam mails once spammers have your email address. Do not reply, do not bounce, this only lets spammers know that it is a working email address. About all you can do is change your email address or wait it out until the spam stops.
