Hi,
It seems that with the ever changing state and abilities of Messages to become more and more like the iOS version that these "features" have been deactivated.
You will need to Tell Apple Feedback - Messages - Apple
This Feedback page does not get updated when the Messages Version changes. (It is in a different List to get the OS drop down updated).
Put all the info from the lower drop downs in the Free Text Area.

Thanks for the reply. Is it confirmed that this is by design?
Odd they'd disable such functionality and leave the sort option in the menu as an artifact.
It does seem logical to make it better match iMessages as I can't sort there.
I wasn't sure if this was something only I was experiencing...maybe a bad file, bad upgrade process - something broken. Was considering reinstalling, as I don't know of any stand-alone Messages installer or on Appstore. Nor of a way to reset or adjust it. But I will avoid that if it is 1. A recognized bug 2. By design.
I do know there is an auto sort option in the ichat PLIST file. Modifying the value to false via Xcode does not change any behavior. I checked the permissions of various files and folders, and I have full read/write access.

The iOS version can only display the messages in the Order they arrive.
It auto sorts the most current chat to the top of the list.
Bringing the two OSes closer together and therefore the apps closer together seems to be the way Apple are going on this.
Generally this seems to override the Mac's ability to Sort so when Sync via iCloud is On some features are turned Off.
The other being Save History when Conversations are Closed.
Turning Off the sync only seems to bring back Save History on Close which you can then tick.
The Sort option never reappears as Dark text to make it active.
This does seem strange as you are more likely to want to save Chats on the Mac on a more permanent basis compared to the iPhone.
Also the ability to Dismiss a chat rather than Delete it also seems preferable to me.
High Sierra seems to Allow both Save on Close and Sync via iCloud without issue (while at the app end at least.) Possibly allowing both is the cause of the Out of Order and Not Delivered issues people have reported.
