Since updating to OS Mojave's my Apple mac keeps on freezing 😠. Is there any way to stop this?

Alas. So much for the easy solution.
This list (https://www.macworld.co.uk/feature/mac-software/apps-work-macos-mojave-3678735/) might point you to some trouble spots among the big software contenders, but it's worth noting I have a pretty good spread of many of the apps listed there (CS5, Word 2011, etc), and none of them crash or burn, nor do they contribute to any slowdowns on my Air. The trouble I was having on my Mini appears to have been due entirely to a failing HD.
That is the next thing to check, by the way. Run Disk Utility on your drives and see if any of them report problems in the SMART status (bottom left of the table of info here):
If it says anything other than "Verified", you'll need to replace the drive soon.
In addition to that, run over your Mac with a fine-tooth comb. If there's any third-party stuff loading in your system menu, or anything loading under "Login Items" with your user account, make sure it's up to date. Also, older software that was not cleanly uninstalled might have left something behind that's interfering with your system now — though tracking that down might be extraordinarily difficult.
Some third-party apps require you to disable SIP (system integrity protection) to install and run. If you don't remember ever booting to recovery and entering this command in the Terminal:
csrutil disable
…then you probably don't have any such software on your machine. Nevertheless, try loading Terminal (you don't have to reboot to do this) and enter this command:
csrutil status
If you see anything other than "System Integrity Protection status: enabled.", you'll need to boot to recovery, select Terminal from the Utilities menu, and enter this command:
csrutil enable
…Followed by a reboot. You can only enable or disable SIP from recovery. You can't do it from safe boot or even via sudo.
Among other things, SIP keeps permissions on files and folders what they ought to be. If those permissions get munged, some programs (and possibly macOS itself) might have trouble functioning.
Do you have a third-party peripheral, such as a keyboard, mouse, printer, scanner, or some other hardware element? Confirm its drivers are up to date.
If you have Flash, make sure it's the most recent version. (Check it via the Flash Player item in System Preferences; if it's not there, you probably don't have Flash.) I got a system dialog today telling me the Flash updater daemon was 32-bit, not 64-bit, and so I needed to run an update (the default is for it to auto-update, but I turned that off years ago). Apps that have daemon programs like that, running in the background periodically, are likely suspects in quietly causing trouble in a largely-untraceable way.
Also, take a look at Font Book and see if there are any fonts listed that appear to be damaged or poorly coded. Problematic ones should show the yellow caution triangle next to them in the fonts list. Consider turning those off, or removing them, if there are any.
I've seen problems like software-extension incompatibility before, and it always results in unpredictable system performance somewhere. The trick always is finding out which program is the source of the problem. You've probably seen EtreCheck referenced in other posts in this forum. It might be worth running a report on your machine, seeing if there's anything noted in it, and removing the problematic software, if any.
just coming back in to mention that the person i know with the 13” mbp said the laptop is running sierra and has absolutely no issue related to freezing or beachballing.
so something that changed from high sierra and on is causing this and so far we have exhausted a bunch of options.
i can confirm that dragging all my drives into spotlight off in preferences didnt help.
i have the following that automount:

used to also have a ntfs automounting but disabling that automount didnt do anything.
would be very helpful if we knew eachothers setups and tweaks, to better ID the problem
thankfully for me the spotlight fix discovered by ex cop right at the start of all this worked--- and i have been using my laptop like that since then.
so then this week i hoped it would be safe to try dragging my hd out of the dont search area in spotlight by now. i tried once before a couple of months ago to no avail, but i thought with all the updates i would try again. but i had one good day and today its back to freezing up all the time and needing to be restarted to use again. so back the hd goes into dont search!!!!
but all i can say is i am eternally grateful to @ex cop for his fix (page one of this thread) cuz otherwise i would be so miserable. i mean i miss being able to search my laptop but at least i can use it for everything else.
crazy it hasnt been fixed yet.
why are we having to explore so many under the hood tweaks in the hopes this is resolved ?
isnt that apple’s job ?
i keep wondering as well ‘will this tweak or change fix the problem ?, let me try it’
ultimately i wind up with a bunch of tweaks i need to be mindful of just in case, and then theres official updates which could undo them.
it should ‘just work’ .... but unfortunately it doesnt.
I had this issue, and with the newer updates my microsoft mouse went berserk.
Along with reinstalling the mouse driver after the updates (why, mac, why are you killing my mouse?) the MOUSE is why the computer freezes, I found!
So... unplug and replug the mouse USB. Et voila!
i dont think you're issue is related to this problem, strictly my opinion.
i do not use external accessories and have a random freeze that culminates in my os being completely unusable
although the problem is unpredictable, sometimes wondering if it's occurring due to the screen shutting off after inactivitiy, or due to finder/spotlight issues .... ? idk.
can others please chime in and let me know if their macs connect to SMB shares ?
i have been using SMB to connect to my NAS shares for a while, ever since SMB has been recommended by apple moving forward. but i can try reverting to AFP as well - just a couple of things i'd need to adjust on my routine chronosync jobs after switching to AFP from SMB, but worth a shot if i hear from anyone else:
do you use SMB for connecting to a share ?
do you use AFP for connecting to a share ?
do you connect to a share at all ?
may be worth exploring this to see if SMB implementation in macOS is a mess or not.
i had some share connections which took some time to mount at each login ....
i decided to rebuild the script and create an app so they connect only using SMB, whereas before i had a mix of SMB and AFP.
not sure if this improves things, since my beachballing is random and unpredictable (it can be a few days to a few hours).
but one issue might have been that i have shares that require different credentials to connect to, and the reason i was trying a mix of SMB/AFP for the same cloud drive.
Further update: After having several daily crashes since my first Mojave installation back in December and trying different suggestions without consistent positive results, I can say that the single most successful solution so far (for me) has been disabling the dedicated NVIDIA GPU and working exclusively with the integrated Intel graphics. I've been almost 10 days without incident - and with extensive use of my most common work apps. Please Apple/Nvidia, sort out your driver compatibility already.
I've found using the trackpad for a second can often unfreeze the USB mouse when it exhibits this latest freezing behaviour.

If you have issues with your 2013 Mac hardware you will only add additional issues to your current ones. Apple has not built a decent MacBook Pro since late 2015, if you upgrade you will have your laptop in service more time than you can use it. I have been able to use my macbook 3 weeks this year, they are replacing the logic board for the second time this year. A soon I get it the keyboard will fail, maybe the display follows next. Keep away from the newer MacBooks Pro. My opinion is based on my experience, it might be wrong.
zero, I believe you are correct that it involves many issues. I have only had 2 freezes in the last 4 days, and both were when attempting to scroll within the Photos app. I have over 37,000 pics in Photos. Also have same number of pics in Aperture and iPhoto. Freezing occurs in all three apps. All three apps are enabled on my external disk. I followed earlier advice from exCop and disabled both internal and external HD's in Spotlight. I used EtreCheck, and noted that my 16 G's of Ram were being stressed. I also uninstalled 10 apps that really did not need. Still believe that the change the file system is one of the problems. Earlier I noted that Alsoft (DiskWarrior) is aware of the problem, but has not updated as of yet.

From what I have read, OS X creates this 'unknown' partition when you start using Time Machine. It's called an EFI partition, look it up. Apparently it's where your saved configurations are held to allow them to be restored when needed.
I have been trying to clone my HDD onto an SSD drive for a couple of days now with no success. There is a way to delete the EFI partition however, since you guys seem to be having all sorts of problems once it has been deleted, I don't think I'll go down that road!
It's a bit off the thread topic, but for info I clone my iMac fusion drive HDD to a WD SSD as a (daily) bootable backup using Carbon Copy Cloner (CCC) from Bombich Software. I also use Time Machine, but only for its convenience in terms of easily finding specific file versions from a particular date/time. The only (and minor) shortcoming of CCC is that it doesn't include a real-time synchronisation function (but they tell me they're working on it). So for now I sync my "work-in-progress" files to my MS OneDrive using Sync Folders Pro from GreenWorldSoft.
whether the issue is tied to 3rd party apps or hardware or something else, impossible for me to tell.
what i know is something was changed in macOS, and either older hardware like mine is choking on it, or 3rd party vendors are not well informed about exactly what has been changed. i suspect it's the former, simply by my observations of this issue that continues to occur for me.
not that i care anymore about the ecosystem, just that the prospect of not knowing (or maybe never knowing) what is causing this issue -- is what bothers me more.
can anyone suggest a tool that will allow me to view, in real-time, what the hardware is actually doing .... rather than relying on what macOS logs in the console ? I'd want to use something like that to determine exactly wth is causing my beachball of death.

I also had Soundflower and EPSON drivers before the reinstall, I did not used them since.
Today I started to use 2 additional apps: Time machine & FNable (not available from store any more and I have an older version of the app) and it started freezing again, but a bit less painfully. After a while I've seen in Activity Monitor FNable is not responding and I managed to kill it. Freezing stopped.
It is weird because I had a freeze earlier since the reinstall and nor Time Machine nor FNable were installed that time - that is why iCloud is still suspicious to me. Or maybe there are more than one sources of this issue. Maybe one is iCloud for me and another one is FNable / Time Machine / Epson / Soundflower.
So my best guess is more than one corrupt apps/services with the same symptom.
