Can't Change Printer Preset

Hi,

I have been using an Epson Expression XP-820 through numerous upgrades of the Mac OS, now on OS Mojave. My problem is that my Draft preset is no longer in draft mode, it's in normal mode. When I click on the 'Media & Quality' link in the drop-down, the slide for Quality appears, set at Normal, with Draft on the left and Best on the right. The programming does not allow me to set it to Draft, but will allow me to set it to Best.

How do I get this printer to print in draft mode again, because I find no options to add a new preset, only to accept a previous preset as new, but I cannot change any of the values ? This seems quite ridiculous at this level of tech, that I should be forced to be wasting quite a bit of ink printing at a level I have no need to.
