I got the iphone 8 plus red 64gb since august now i want to get the XR or XS my question is if i can go to apple and give them my old iphone and pay the difference to get the new iphone??

See Trade in with Apple GiveBack - Apple. Depending on your model and condition you might get more for it elsewhere.
