"Mac OS Extended" option not showing

I'm trying to install some music software that requires the drive to be formatted as "Mac OS Extended (Journaled)". Currently, the main drive on my Mac Pro (late 2013) is formatted as "APFS", running on High Sierra OS. When I try to erase and re-install OS, it only shows the 4 options for "APFS". How do I get the option for OS Extended?

Also, would there be any concerns / disadvantages to using in OS Extended, instead of the APFS that was originally installed? I understand that APFS is 'optimized' for solid state drives, but unsure what setbacks to expect in real world usage.

The only way to reformat your drive to OS Extended (HFS+) is via some terminal trickery because it basically isn't supposed to be done. It may also be quite risky.

If I were you, I'd look for a different version or different music software that runs fine on APFS, or you could downgrade to Sierra. HFS+ and Sierra have a good relationship.

Does the installer not allow you to install because the drive is not HFS+ (Journaled)?

Or did you just read something to that effect on the documentation?

I can't see why a music application would have anything to do with the drive format (well, I sort of can see why an old format like FAT32 should not be used).
