How do you make a contact a VIP

On my iPhone 6S in my mail app how do I make a contact a VIP? I am trying to figure out how to delete over 200 emails in my inbox. I have already put the emails that I want to keep in the folders that I’ve created. So how do you delete emails from your inbox without having to do it one at a time?
