I have a Pages document with several individual tables. I would like to merge them into 1 table, but formatted correctly over a number of pages.

Nope. There is no automated capability in Pages to merge multiple tables. It is all manual labor.
There is no reference to merging Tables in Pages Help that I can see, however you can click on a Table, then click on the Table Selection Circle top right, command x, click in a free cell in another table command v to paste the entire table.

SOLVED. Tables can be moved and once they are aligned appear to merge.
