I have the latest software on iPhone X and also the Mojave on the Mac, yet I keep getting this message for the last 10 days that I need to update my Mac software in order to connect the iPhone. Why is this?

When you connect your iPhone, iPad, or iPod touch to a Mac with macOS 10.11 or later, you might need to update the software on your Mac in order for it to recognize your iOS device. Learn what to do.
If your iPhone, iPad, or iPod touch has a newer version of iOS than is supported by your Mac, you may see this alert: "A software update is required to connect to your iOS device. Would you like to download and install this update now?"
Click Install to download and install the software so your Mac can update or sync your iOS device.
If iTunes doesn't recognize your iPhone, iPad, or iPod touch, learn what to do.

This is Apple being evil, forcing us to upgrade to a MacOS that's altogether new, whether we want to or not. I was going to wait for the next iteration of MacOS, after the bugs are worked out. Now, in order to back up my iPhone before buying a new one, Apple in EVIL MODE is forcing me to upgrade to the new MacOS. Truly infuriating!

This is absolutely incorrect.
You are stating, incorrectly, that MacOS Mojave is required to interface to iOS 12.
FWIW iOS 12 requires iTunes 12.8 or better running on OS X 10.11.4 El Capitan or better, or iTunes 12.9 on Mojave, or Windows 7 or better.
