iPad in Guided Access - Disable Software Update Notifications Forever

I have a few ipads I'm setting up in Kiosk mode with Guided Access. Every one of them is on IOS 11 and the other day every one of them brought up a big old Software Notification box asking me to upgrade to IOS 12. It's the box that says, it's "IOS 12 Now available, install now, or install later".

Since it's in Guided Access mode it wrecks havoc with people trying to use them because they see this big annoying upgrade box instead of what I want them to see.

I've been through all the settings and I thought I turned off all notifications for this but they still appear.

It's not about whether I want to keep the iPads on IOS 11, IOS 12, or IOS 15 in the future. I don't care which IOS they're on - I just don't want the box popping up interrupting my users and blocking the Guided Access content.

What's the way to get them to vanish forever?

Unfortunately I already had Settings > iTunes and App Store > Updates turned OFF and the iPad I just checked had the "Upgrade now" box sitting in front of Guided Access.

I went into the Storage area and Deleted the already downloaded upgrade. That may be whats causing the box to appear - at some point it already downloaded the update before I turned Updates to OFF and now it's nagging me to install it. I'll know more in a couple of days.
