If she purchased the iPhone within the last 14 days she has the right to return it. Sounds like she talked to AppleCare and NOT to the Apple online store where she ordered it.
Then return the iPhone where you purchased it, get your money back then buy a new one.
Then have your wife return it to Apple for a refund. You could have done the update yourself, there is no charge for it. Again the center is probably an authorized SERVICE center, not a reseller. Have your wife directly contact the online Apple Store.
I don't care if you do or not. Since you didn't buy this one you haven't yet purchased one.
Seems odd though that you say you pre-ordered it then go on to say it was a gift. If you pre-ordered contact who you pre-ordered it from and return it. As to the authorized service center, they don't open phones to do board level repairs, they either replace the screen or the entire phone with a service replacement, which at this point would be a new iPhone. If they are not an iPhone reseller (sounds like they aren't) then no they can't take it back and give you a new retail model.

my wife bought it directly to apple in the pre-order, I opened it 5 days ago I gave it to my birthday, the defect in screen is evident. talk with apple support, they gave me an appointment at an authorized center. They charged me for doing an update, because the software is not included in the warranty, then they confirmed me it was a manufacturing defect
but they want to send it to repair changing the screen, for 12 days.
she communicated with apple, the appointment in the apple service was made by them directly, the only option is open the iPhone
and send it to repair.
