I have a m4v file which contains both subtitles and audio languages...
...I can use both subtitles and audio tracks by watching it using VLC
...but I lose subtitles when I play the same file with QuickTime Player
Any reason? What I can I do?

QuickTime Player requires a special subtitle format (Tx3g), while VLC is much more flexible in supported subtitle formats.
A remuxer like Subler can convert the file with embedded subtitles to a compatible .mp4 format, in most cases.

Good to know, actually I have converted those videos from one format to mp4 using HandBrake; so, this means I have to select the correct subtitle format somewhere within HandBrake.
VLC has a number of codecs that many other players do not. Many players (Quicktime, Windows Media Player, etc) have a number of file types that they cannot play. VLC has gathered a huge number of codecs (compressor-decompressor software) and can play a lot of different file types. They can also pick up on subtitles where other players cannot.
