I have recently purchased Sony WH-100xm3 headphones mostly for music, wanted to know if i connect it to apple tv 4th gen while watching movies on Netflix & amazon prime video, will it support 5.1 surround or just stereo sound ?

Bluetooth itself supports stereo, not more channels. To simulate surround sound in a downmix for two-speaker headphones, you need to connect the headphones to an AV receiver that is capable of such processing. The Apple TV does not do this.
