Has anyone noticed a new process after installing Mojave called "screencaptureui"? I am trying to figure out how to disable it as it does not show in the running processes, however, it is triggering our company software which does not allow screen capturing functions.

It only runs while a screenshot is being taken and edited. I don't see any process named as you posted.
One can prevent screenshots from being taken by changing the key combinations in the System/Keyboard/Shortcuts/Screenshots preference pane for each item to some impossible combination to use, particularly by accident and even by choice: One would be ⌘ + O + F19.
