Nicknames for my contacts
Can my contacts see the nicknames that I assigned them on iMessage? Individual or group messages.

No. Unless, of course, they see the screen of your phone. So, if you're going to give people nicknames they might not like, put a passcode on your phone (do that anyway as it protects your data).
