I have had an AppleID for several years now. Over the last year or so I've been getting more and more scam emails. Sometimes as many as 2-4 per day. I'm wondering if changing my associated email address for the ID would help this... Any idea? Or are they just going to target all email addresses?

It might, assuming that you mean that you will stop using the current email account everywhere that you currently use it (just changing it for your iTunes account is very unlikely to make any difference). If you want to change it : Change your Apple ID - Apple Support
