so the issue is, when i tap on my apple id, nothing happens! it's just grey as in the screenshots. I can't sign out, I can't access iCloud, I can't even cancel some app subscriptions. Now I know my password and everything works fine on my MacBook.

Do you have access to another WiFi network where you can try? That has worked for several people.
Try a restart.
Restart your iPhone, iPad, or iPod touch
Try a forced restart.
If necessary
Do a backup and try a factory reset.
Try a factory reset.
It has been like that for the better part of 2 months. other WiFi networks, restarting and forced restart doesn't help.
