Change Text Color photo edit

I would like to know how to change the color of the text, when I am editing a photo on my iPhone. I can get the text on the picture, but can't figure out how to change the color to white (or other colors)

Is it possible to edit/customize iPhone dark mode? On my MacBook dark mode is great, and the dark background with white/light text looks very nice. On my iPhone 12 (and previously XR) dark mode is kinda great, but the blue text on black background looks awful. If it were white or light grey it would be much more appealing. I don't suppose that there is way to customize this? I suspect not. If there is, please share how you did it. If not, could this please be forwarded to the product team as a feature request?
