I am unable to assign an input or output track (they are greyed out) - I can only select 1 & 2
I've used Logic for years, but cannot for the life of me understand what's causing it.
The mixer is already selected in System Preferences and I am able to playback just fine (Core Audio is working).
OBS Mac Pro (Early 2008), OS X El Capitan (10.11.6), Various toys
According to the manual, which I'd highly recommend you to review, you have to activate USB RTN mode (by pressing the corresponding button) on Soundcraft's channels that you intend to use for multitrack recording into Logic.

Have you tried that very first thing to try: restart your Mac?
Does that mixer come with its own driver, or is it class compliant (driverless)? If it has a driver, have you checked the driver sertup panel?
Is there other setup software? If so, have you checked that?
What happens if you create mono tracks and try to assign Soundcraft's inputs to these mono tracks?

Yes, I have restarted. I’ve had this board for a while and it works brilliantly; no driver, just plug and play.
To be honest, it was working yesterday, and I’ve not changed anything (doesn’t everybody say that? Haha!)

I always have manuals close to hand and I’ve had this particular one open for a while, and yes, the USB RTN buttons are activated. Even if they weren’t, it wouldn’t affect what’s on-screen.
I’m trying all sorts of variables, and am certain the fix is just around the corner. Every fail is closer to the solution, haha!

It’s the same in mono or stereo, I’m afraid. It was one of the first things I tried.
No worries. You're right, inknpaper. So, judging from the screenshots, you're using an earlier version of Logic than 10.4.2, correct? What version of OSX / macOS are you running?
I'd say, try it with a new project, after a reboot (as recommended by @Eriksimon). See if that clears the problem.
Another idea would be to check what's going on in Audio MIDI Setup (Audio Devices window).
