You can sync your contacts via iTunes on your computer. You would have to make sure that Contacts was not turned on under Settings>your name>iCloud on your iOS device. Then you would connect your device to iTunes via your computer, and select the "Info" option in the sidebar under the iPhone list, then select the Sync Contacts option:

I want to transfer ALL contacts from my iPhone to my Mac.
I believe there is also a way not to use airdrop, but physically connect iPhone and Mac and then transfer.
I simply cannot figure out the specific steps to do this.

As I understand it, you're looking to transfer contacts from your iPhone to your Mac without the use of iCloud. While iCloud is the best way to do this, there is a way to do it without.
Transferring contacts from Mac to iPhone is a little easier because we can use CSV files and vcards. Going from iPhone to Mac without iCloud can be a little more challenging. To best do this, you're going to have to AirDrop your contacts from your iPhone to your Mac.
To do this, click on the contact you'd like to import. Then, scroll down until you see "Share Contact". Once you click that, the share sheet will pop up. You're then going to have to AirDrop the contact between your iPhone and your Mac. This is a helpful Apple Support document on how to do that.

As far as I'm aware, there is no built-in way to transfer contacts from your iPhone to your Mac. I could totally be wrong, but a quick google search of "Transfer Contacts from iPhone to Mac" only comes up with third-party programs. There may have been a way to do this in the past, but with the rise of iCloud, Apple may have removed this functionality. Once again, I'm not completely sure- if it exists, I'm not seeing it.
So you're seeing what I'm seeing, try googling the same thing. You may find some helpful articles, but I'm not aware of any official Apple-sanctioned way to do what you're asking. You may be able to do what you're asking with a third party program, though, but I'm not entirely sure about the rules of discussing that on Apple Support Communities. There are articles that look like they would be able to help you with that though.
