Re the iRC5185 with H1, the job accounting feature is supported with the v2.0 driver. It is located under the Job Info tab which is accessed via the Fiery Features > Full Properties button. The issue with 10.6 and this driver is the 64bit applications. The Fiery Features plugin is only 32bit, which results in the option having a line through it when you use a 64bit application. At this point in time, the only workaround is to set the application to open in 32bit mode. This will make the plugin available.
Note that the EFI update was only to change the permissions on the fierycupsfilter plugin, which is located in ./Library/Printers/Canon/PS3 for the newer models of Canon-Fiery RIPs. The permissions issue stopped a 10.6 user from printing with the driver - a message would appear stating that software was supported.
Note that the UFR driver is not an option when you have the Fiery controller. The language is not supported by the RIP, so alternatives are needed to get this working on 10.6.
Note also that Rosetta is only needed for the installation, due to the outdated installer EFI uses. It does not resolve the lines through the plugins (known as Print Dialog Extensions - PDEs). It is interesting that Apple has made the 64bit/32bit incompatible issue result with the line through the PDE. This same symptom occurred when Apple moved to Intel and the vendors were still providing PPC drivers. The solution then was to force the application to open using Rosetta, which stopped the lines (aka strike-through). Once Universal Binary drivers were released, and it certainly took a while for EFI to make them available, the issue was resolved.
So, here we again, with a similar symptom and a series of workarounds until new drivers are delivered. This previous experience stopped me from updating my users to 10.6. From my testing, it doesn't really offer any major improvements over the currently stable and working 10.5.8. Once the DTP apps become 64bit then it may be time to update, but until then there is no real reason for updating, except to say that you are using the latest. As has been said many times before, don't fix something that is working.
One final suggestion. Don't blame Canon for this. They are not the only vendor who appears to be caught out by the changes Apple introduced with 10.6. And in future don't upgrade until you check that all your apps and peripherals will work. Any IT admin will tell you to wait until the second service pack is released before changing and even then use a test machine to check everything before rolling out. A general user is not expected to take this much care but as the tech, especially at a Uni, you should have known better....
