Can we still make photo books under projects in iPhoto? And then order through an extension? I still find the iPhoto platform the easiest

You don't need an extension to order books created by iPhoto. You just need to be able to create a PDF filer of the book.

Are you able to create a PDF file for that book?  If so there's a 3rd party book provider which used to do printing for Apple, Mimeo, that will take PDF files created by iPhoto and print and bind books and calendars. Use the Mimeo link for direct access to the Apple Photo Project Ordering Service web page.

Or you can upload the PDF file to PrestoPhotos which can also print and bind books and calendars from iPhoto or Photos pdf files.

Create the pdf file according to this Apple document: Preview a print project in Photos or iPhoto to avoid issues - Apple Support.
