Sign into iCloud, and under your user name in the upper right corner, select Settings. On the Settings page, and in the lower left corner, you will find the ability to recover deleted documents provided that this occurred within the last 30 days. Apple's iCloud is not intended as a backup solution.

Beyond 30 days, Apple cannot recover them on iCloud, but if you have been dutifully using Time Machine to backup to an externally mounted Time Machine drive, you may be able to recover your lost Pages documents from this location:

~/Library/Mobile Documents

You would launch Time Machine from Dock : Launchpad : Other, and it will show you a tiled array of Finder windows. Press shift+command+G to bring up the Go To Folder dialog. Copy/paste the above path into it, and press GO. This will now put you into that folder, which is also the local view of your iCloud Drive.

Now, you can use the top arrow key adjacent to the Finder windows to step back in time until your missing Pages documents (or the Pages folder contents) show the files that you want to recover. Select all that apply using the command or shift keys for multiple selection, and then click the Restore button.

If your restore is successful, and after a brief period to synchronize with iCloud Drive, your Pages documents will now reappear there.
