How do I simply disconnect my notes / disable notes on one of my devices?

How do I simply disconnect my notes / disable notes on one of my devices?

I have multiple Mac computers, some at work and some at home. For this particular Mac, while I want it connected with my iTunes account - I want to keep it "stripped down" in basic places, so email, notes, etc I'm disabling the accounts.

With notes however, there seems to be no options at all. I can ADD local notes, but I cannot stop my iCloud notes from appearing on this device, and there doesn't seem to be a way to disable/uninstall notes either.
