Incorrect APN settings

I have an iPhone 7 with a UK O2 contract and on a trip to Japan I bought a data SIM to use while I was there. Since then, when the phone is rebooted, the APN settings revert to the Japanese APN settings. This causes no issues unless I am, say, in Europe when on trying to connect to the net an error telling me I am not subscribed to a data network. This can be overcome by manually re-entering the correct O2 APN settings. There is no profile listed to delete, but if I click ‘reset settings’ in the mobile data screen the . jp APN settings reappear. This would seem to indicate there is a hidden profile somewhere.

Any suggestions?

Carrier settings, see previous answer.

Surely, restoring from a backup will also restore the incorrect settings.

Searching for answers more widely resulted in this: https://discussions.apple.com/thread/2470873?answerId=11737052022&page=3. But it seems awfully complicated and it’s quite an old solution. One would have thought that any bugs would have been sorted by now.

You won't find out until you try.

Note that when you buy iPhone locked to specific carrier, when then carrier unlocks the device, Apple instructions in document How to unlock your iPhone for use with a different carrier - Apple Support are as follow:

Use these steps to finish unlocking your iPhone:
Back up your iPhone.
After you make a backup, erase your iPhone.
Restore your iPhone from the backup you just made.

I'm not saying it will work as I cannot be sure. But you can wait for others to post other instructions or follow offered steps and who knows, maybe resolve your issue with 1 hour or less (I think).
