How do I launch Quicktime Player without selecting a file? Every time I double click to open the application, I'm then prompted to select a file to open. I don't want to open a file. I just want to open Quicktime and record a new video from scratch.

QuickTime has been launched when the Finder window opens. Just command - w to close that window and continues your work.
