It's the second time that I apply the last update package and I can not boot up the MBP, mid 2012, with High Sierra. Anyone else with the same problem?

Many have had the same problem, sometimes it's been found that it was trying to install Mojave... even on Macs that can't run Mojave, I'd disable Automatic Updates.
Assuming it is the one you need, try downloading it directly from this page: Download Security Update 2019-001 (High Sierra)
