Can't Control Volume in Tracks
Can't control volume with slider in tracks. When changing volume, it reverts back after stopping & starting. MIDI and "real" tracks.
What's the problem here?

that sounds like you have automation points set for volume.
if this is the case you have to control the volume by dragging the automation points up or down, delete the automation points completely, or disable automation on the track:
