Plan to purchase Sonnett eGFX Breakaway Box 550W (GPU-550W-TB3) and MSI Video card Radeon RX Vega 56 Air Boost 8G OC;
will this setup be “plug and play” (any known issues/challenges) on a 2018 Mac Mini running latest Mac OS (i7, 1 TB storage, 32 Gb memory, and 10 GB Ethernet.
Additionally, would I use a TB 3 cable port to each of two displays or one and a DVI cable?

The type of connection to monitors depend upon the connection a available on the displays. You can connect the displays to either the available ports on the Mini or on the eGPU.
So, if I understand your response accurately, the cables themselveves do not matter as much as the fact that they are the appropriate ones to connnect the eGPU unit to the monitors that will be utilized. Which in this instance will be an HDMI to HDMI and an DVI to DVI?
