Mac Mini 2018 External graphics/display processor

Plan to purchase Sonnett eGFX Breakaway Box 550W (GPU-550W-TB3) and MSI Video card Radeon RX Vega 56 Air Boost 8G OC;

will this setup be “plug and play” (any known issues/challenges) on a 2018 Mac Mini running latest Mac OS (i7, 1 TB storage, 32 Gb memory, and 10 GB Ethernet.

Additionally, would I use a TB 3 cable port to each of two displays or one and a DVI cable?

I do not know what you mean by "Additionally, would I use a TB 3 cable port to each of two displays or one and a DVI cable?".

The type of connection to monitors depend upon the connection a available on the displays. You can connect the displays to either the available ports on the Mini or on the eGPU.
