I was wondering if the following is possible: move my iTunes library to my NAS, map a network drive so that the NAS is available in Finder. Is it then possible to load my movies and TV shows into iTunes on my MacBook and than stream movies and TV Shows which are saved on my NAS via homesharing on my Apple TV?

Yes, that should be possible. For Home Sharing, iTunes is the server. The Apple TV is unaware of the location of these files on your network or external drives. Thereby, both the NAS and the MacBook need to be online for this configuration.
