When I do this, I still occasionally get interrupted when my Apple Music subscription is being used at home through Sonos. But if the songs are downloaded to my phone, why would it create a conflict?

Apple Music Individual subscription is for one user, on all his or her devices. The service can be used on one device at a time. For multiple users, you should set up Family Sharing and get an Apple Music Family subscription, or use multiple Individual subscriptions.
