I’ve been experiencing a problem with Snapchat today, and just a few hours ago, the app’s icon turned into this white grid. Is this a problem with the app, or is something wrong with my phone?

That icon indicates an app that hasn't completely downloaded, which in your case happens to be 'Snapchat'. That said, do you have 'Automatic Downloads' turned on? Go to Settings > iTunes & App Stores > Automatic Downloads > Apps & Updates.
Turn on Automatic Downloads or App Updates
To resolve the problem, follow the steps in the article below.
