Read receipts is turned off in Settings >> Messages for my apple acct. Read Receipts is turned off for that individual Contact. However, the time that I read a message is still showing up on the other person's mac server iMessage. Any ideas why?
What does “still showing up” mean?
Naturally, turning off read receipts does not work retroactively. Messages sent before you turned off read receipts will not have those receipts erased.

What is the iOS version?
How did you come to know that they know when you have read the message?
iphoneX and whatever the latest ios is. I can see the time I read the message from my acct on the mac server iMessage of another account. Thx!
Read Receipts was always turned off. That's what is weird. It was never on. But it does show the time I read a message from a friend. Wondering if the mac server has different settings.

That has absolutely nothing to do with your read receipts setting.
