One day in July vomax stopped recording on my Apple Watch. I have repeated the activities and still nothing.
I have restarted, reset and unpaired and then paired again. Nothing has worked.
they only two things that could of changed at this time was new o/s and adding data plan to watch. ( uk O2)

That’s exactly what I have done, as per my question.
Have you reset your workouts calibration ?
Ok that’s is problem solved. Suspect the unpairing etc would have been unnecessary.
but it’s great it works
This solved it in iPhone setting on privacy-> location services-> system services
