The transferring data screen on my new iPhone 11 pro placed next to the old iPhone 7 says “time remaining: about 2 hours.” Could this be possible? What should i do?

It's very possible. It can take a long time to transfer data and apps over a wi-fi connection.

If you have a LOT of data to transfer, it can take some time. Also, the Wifi speed you have could effect the data transfer as well.
