I have a brand new iPad Pro with a Smart Keyboard, but I can't find a way to set it to the DVORAK layout. Any suggestions? Any way we can influence Apple to add this layout? Shouldn't be that hard to do :)

With the keyboard connected, go to settings > general > keyboard > hardware keyboard and tap over at the right edge and choose Dvorak from the options you get.

Yes...it’s connected. I’m using it to type this :)
The keyboard must be connected for you to get the Hardware Keyboard setting. Are you sure it was connected?
Tom...thanks for the answer. Unfortunately I do not have the "Hardware Keyboard" option in my menu. This is what it looks like. And if I go to Keyboards in that menu, the "Add new keyboard" does not have a DVORAK option. Any suggestions? Thanks again!!

That’s very odd. Perhaps you need to reset the device. It should look like this with keyboard connected:
