The audio adapter that plugs into my charging port on my iPhone 7 isn’t working, every time I plug it in and try to listen to music it plays through the speakers and not through the adapter into my earbuds.

Get a flashlight and a toothpick, inspect the Lightning Connector on the bottom of your iPhone and carefully clean out any dust/dirt/snake scales/lint, etc. that you find.
Did you purchase this adapter directly from Apple, either on-line or from an Apple Store? If so, if you did so within the last 14 days, you could return it for a replacement or refund. If you purchased it from somewhere else, you will need to work this out with where you purchased it from.
... and does the literature that came with this adapter specifically states that is does work with an iPhone 7? Does it have a single port for EarPods/Headphones or a dual ports to allow it to continue charging and listen to audio simultaneously? Who makes this adapter and what model is it?

The adapter can be used properly on other apple devices like an iPad or an older gen iPhone but on my 7 it just won’t work
I’m not sure on what model it is but it’s a single head just for an audio jack, I kinda threw out the box. The packaging it came in was a plastic box but it was made by apple
