You did a great job trying out another cable to rule that out as a cause. Did you make any changes to your MacBook Pro since noticing this change in resolution on your external monitor? Did you update to macOS Catalina? If so, check to see if you can find other resolution options by pressing and holding the Option key while you click on Scaled in Display preferences.
